I get excited every summer when I see the bright beautiful pink Salmon grace the cases of high end local markets. Copper River salmon has a fresh and unique flavor and is a great introduction into the Wild World of Salmon dishes because it is pleasing to the palette and can entice those who are afraid of the fishy flavor that generally is associated with Salmon in general.   1. Preheat your oven to 400 degrees. Season your salmon with salt and pepper, drizzle with a little olive oil and bake 15-20 minutes until light pink. set aside to let cool.
  2. While your salmon is roasting, mix your dijon, herbs, olive oil, and lemon in a bowl and add salt and pepper to taste, set aside.
  3. chop up all your veggies in any shape you prefer and arrange them on a plate or platter. Slice your egg and place your olives and anchovy in a small ramekin or dish on the plate.
  4. Once the salmon is cooled break into pieces and set on the plate. Drizzle the dressing over all your fish and veggies and serve family style with a little bread along side.
