What I have found with Sea Scallops is that most people have not tried to make them at home or they are intimidated by their cooking method. This is a simple dish, nothing to it really, that will wow any guests and can be made in 15 minutes. This is a go to meal for dinner parties as there is little prep time and little mess.

  1. Generously season your scallops with salt and pepper, so they look almost coated....be careful with the salt.
  2. Turn on your burner and place a sauté pan wide enough to hold all your scallops over the flames, add your oil. Let the pan get nice and hot, when you see the first signs of smoke from the pan quickly add your scallops. cook 1 minute per side using tongs to flip in order of how you placed them.
  3. Take them off the pan and set aside to cool.
  4. Use a little white wine or chicken stock and splash it into the pan, you will hear a sizzle, don't be scared. Add your spinach and garlic and stir until cooked through, about another minute or so.
  5. Place your spinach on a plate, pile the scallops on top, and top with lemon zest...This is also nice over linguini with garlic and oil....
